
This warming purée combines earthy beets and naturally sweet carrots with a touch of fresh ginger. Gentle on the stomach and rich in nutrients, it supports circulation and vascular health. Perfect as a nourishing, cozy meal, it highlights seasonal vegetables in a simple, comforting way.

Ingredients (organic/biodynamic):
- 2 medium beets, peeled and cut into chunks
- 2 medium carrots, peeled and sliced into rounds
- 1–2 tsp. freshly grated ginger (adjust to taste)
- 1 garlic clove, optional
- 1–1½ cups water or low-sodium vegetable broth
- Fresh lime juice, to finish
- Pinch of Celtic Sea Salt®
- Fresh parsley or carrot curls, for garnish (optional)
Instructions:
- Place the beets, carrots, ginger, and garlic (if using) in a saucepan.
- Pour in just enough water or broth to cover the vegetables.
- Cover the pot, place on the stove over medium heat and simmer gently until the vegetables are tender, about 25–30 minutes.
- Transfer the vegetables along with some cooking liquid to a blender or use an immersion blender.
- Blend until you reach a soft, lightly textured purée, adding more liquid if needed.
- Taste and finish with fresh lime juice and a pinch of Celtic Sea Salt® as desired.
- Garnish with fresh parsley or thin carrot ribbons, if using, and serve warm.
